Yummy Healthy Lunch to take with you


Whenever my husband eats what I make for him.... he goes "YUUUUUMMMM". He constantly encourages me to share the recipees. My problem is that I hardly ever follow a recipe or can write one. I look at the recipes as an inspirational idea. I love open up the fridge and see what I can come up with. I just go with the feeling and I love being creative and experiential in the kitchen.
When making a meal, I keep three things in mind: I love the food to be healthy, yummy and beautiful:). Ah... forgot, there is the fourth... it has to be easy to make and does not require hours of preparation.

Today, making my hubby his favorite sandwiches, I thought that maybe I could give a try and share that with others. I hope it can inspire you to make a healthier choice for your lunch and provide the necessary guidelines.

Since my husband is really busy at work and hardly ever has time to stop, sit down in a quite place to have a plate of food, sandwiches become very handy.

We use Hemp Bread (by French Meddow Bakery) and Cinnamon Raisin 7 Sprouted Grains bread (by Food for Life).
I combine those two in one sandwich.

So to begin, toast the bread, then decide what kind of spread you want to use.
Our preference is avocados, almond (cashew or any other but) butter, raw hummus or some kind of a spread that I sometimes blend (I will write on that later).

Spread avocado on one slice and whatever else you choose on the other.
In the sandwich on the picture, I used raw hummus.

The filling:
couple of slices of
tomatoes, cucumbers, red bellpeppers,
couple of black Kalamata olives,
dulse (seaweed),
two sun dried tomatoes (cut into very small pieces)
a few leaves spinach
and love:)

It is best to put half the ingredients on one side and half on the other, cover each with the leaves. Then it is easier to put both slices together into a nice sandwich.

Instead or together with the ingredients I mentioned you can add thin slices of red radish, yellow and green zucchinis, green bellpeppers etc.
As for leafy greens: arugula, lettuce, steamed kale, chard etc.

Of course, all ingredients are organic. Loads of pesticides won't contribute to your wellbeing...

I wrap sandwiches in a paper towel and put in a ziplock bag. Ready to go!
